the red sauce served with your chips. it is a zippy mixture of fresh tomatoes, onions, yellow chiles and cilantro.

it is made with three types of chiles one tame and two hot, tomatoes, onions and cilantro. try with meat, fish and cheese.

it is a milder but tangy sauce made from tomatillos small, green mexican tomatoes. salsa verde is also good on meat, fish and cheese dishes and can effectively by used in place of the hotter ranchera sauce.

our cooks named this mild, red enchilada sauce after the gringo whose mouth is not fireproof.

this is the sauce over our chile rellenos, which contains tomatoes, onions, green peppers, celery and a variety of seasonings.
