Dark Ale aged in Cabernet Sauvignon barrels from local wineries. It is aged for 4 to 8 months with black currants, brettanomyces, lactobacillus, and pediococcus added to each barrel. Rich flavors of chocolate truffle, spice, tobacco, currants, and a bit of Cabernet. Very full-bodied, sip slowly!

This beer is very unique and inspired by breweries in the Lambic region of Belgium and, especially, our friends at Cantillon. It is 100% spontaneously fermented, meaning yeast is not added. Once the beer is brewed, it is transferred to a cool-ship or “horny” tank located in our barrel room at the pub. There it sits overnight and collects whatever funky wild yeast and bacteria may be living in the room. The next day it is transferred to oak wine barrels where it ferments wildly and ages for a few months. The end result is a wild, spontaneously fermented, sour, and tasty hand-crafted beer!

Blonde Ale aged in used Chardonnay barrels from local Sonoma County wineries. It is aged for about 9 to 15 months (depending on the age of the barrel) with lots of brettanomyces, lactobacillus, and pediococcus added to each barrel. Medium bodied with hints of oak and Chardonnay, funky brett characteristics, with a nice, long sour finish.

Strata, Cashmere, Enigma, Hallertau Blanc and Eureka hops come together in this complex, hazy creation and conjure notes of peach, white wine, honeysuckle and tangerine zest. Part of the Can-O-Bliss IPA Series, which highlights unconventional hop combinations.

Our friends over at Kentucky’s own Willett Distillery have one kind of barrel: wood. And they put two things in them: Bourbon and Rye. We were fortunate enough to get some of their Bourbon barrels, and we put our Imperial Stout in them. It’s a chocolatey, coffee-y, smoky, Bourbon-y beast of a barrel-aged beer. Word.

We’ve partnered with Barks of Love, an all-breed dog rescue organization in Orange County, for a beer inspired by a long weekend hiking the redwoods with man’s best friend. A light toast on the Michter barrels brings a bold bourbon element to this red ale, tempered by the earthy spice of cassia bark and a finishing romp through French Oak. Go fetch!

Why are Miracle Mike and his dog, Bionic, being chased by many evil laser beam shooting cupcakes and two giant layer cake mother ships? Because we're straight lunatic fools? It’s an unassuming road leading to the priory. Here, off the corner of two intersecting roads, dedicated monks have been making beer for over 150 years. It’s always been a simple life — the kind that requires they brew only enough to sustain the activities of their monastery. In the silence of passing seasons, they pray, they brew and retire in solitary existence behind the sheltering walls. They live a most interesting life. Most likely one we couldn’t sustain. Designed to be a hop driven beer, the aroma presents mostly European variety hops with underlying notes of fresh hay and grassy fields. There is a very low level of yeast phenols present and much of the subtle spice come from the aromatic hops. A lighter bodied beer that immediately makes an initial hop impression followed by a brief thinning layer of malt which is swallowed in the driest finish by a driven hop expression.
